Chocolate Chip Coffee Cookies
Almonds and coffee and chocolate … what could be tastier? Consider adding these coffee-based cookies to your holiday baking this season.
Ingredients:
- 3/4 cup slivered almonds, blanched
- 1/3 cup instant coffee granules
- 2 Tbsp. hot water
- 2 2/3 cups flour
- 3/4 tsp. baking soda
- 1/2 tsp. salt
- 1/2 cup butter, softened
- 1 1/2 cups sugar
- 1 tsp. vanilla
- 2 eggs
- 2 cups chocolate chips
Preheat your oven to 350 degrees F and toast almonds in oven for 10 minutes (or until golden brown). Dissolve the coffee in the hot water.
In a separate bowl mix flour, baking soda and salt.
Beat butter and sugar until light and fluffy, about 2 minutes. Add coffee, vanilla and eggs and mix well. Reduce speed and add flour mixture.
Once dough has formed add chocolate chips and almonds. Drop dough by teaspoonfuls onto cookies sheets and bake for 10 minutes.
Serve with a cup of coffee made from fresh, gourmet coffee beans and you will be good to go!
