One of the great things about MontaVida coffee is the incredibly nutritious and weight reducing benefits this coffee provides. Rather than leaving this gourmet coffee to sit on the hot element and burn, pop it in the fridge and save it for some of these mouth-watering, diet coffee dinner recipes.
Marinating a steak or ribs is the traditional method of tenderizing and seasoning meat, but you often end up with tons of sodium and extra calories. Did you know that coffee is an excellent way to tenderize?
Here is a couple of diet friendly coffee recipes that will bring you back for more.
Coffee Steak Marinade (Simple Pleasures)
Ingredients:
2 Sirloin Steaks
Enough MontaVida gourmet coffee to cover steaks
2 tbsp. minced onion
1 minced garlic clove
½ tsp honey
Leftover coffee grounds
In a large bowl, combine coffee, onions, garlic and honey, stir until honey is dissolved. Pour over steaks – cover completely. Let stand for at least 1 hour (you can do this in morning, then cook for dinner).
Pre-heat grill or oven if broiling– pull steaks out of marinade. Take a small portion of the marinade and combine with the coffee grounds to form a rub. Smooth over each steak – place rub side down, rub top – cook to preferred doneness.
Enjoy! You’ll get a smoky sweet, tender steak – without the extra calories that store bought gives you.
Saintly Ribs with Coffee Rub
Ingredients:
2 Racks Baby Back Ribs
Saved left over MontaVida gourmet coffee (enough to cover ribs)
1 tsp dry mustard
1 tsp chilli powder
1/8 c lemon juice
1/8 c vinegar
2 tbsp. honey
2 crushed garlic cloves
Combine MontaVida gourmet diet coffee, mustard, chilli powder, lemon juice, vinegar, honey and crushed garlic. In a side dish combine coffee grounds and enough marinade to form a rub paste.
Break ribs into single ribs and drop into marinade. Bring to a rolling boil in a large pot – let stand for 15 – 20 minutes, or set in refrigerator all day.
Remove ribs from marinade, rub with MontaVida gourmet coffee ground rub, pop in oven or on the grill. Cook to desired doneness – enjoy!
No sodium, meat falls from the bone, ribs have a tangy sweet and smoky can’t get enough flavour.
Lemon Coffee Salad Dressing
To add additional value to the MontaVida Diet Recipe Round-up – try out this low sodium zesty Lemon Coffee dressing
Ingredients:
1 lemon + Lemon zest
3 TBSP MontaVida coffee
¼ TSP white vinegar
½ Oil (Olive, Grape seed, MCT)
1 tsp stevia or sugar
¼ tsp dry mustard
In a blender combine the juice from the lemon, the lemon zest, sugar/stevia, coffee, and vinegar, pulse to blend. Open the lid and slowly add the oil to make a light frothy mixture – you’ll get about ¾ cups of dressing. Salt & pepper your salad to taste instead of adding the extra sodium to the mix.
Enjoy over a fresh green salad! Add nuts, berries or cheese for extra nutritional value!
