Norwegian Egg Coffee
You just read the title right the Norwegians make a special coffee with the addition of egg! The egg is said to allow the coffee grounds to sink faster to the bottom and also due to its protein content it binds to the bitter tasting poly-phenols creating a clear milder tasting coffee.
It is made by first mixing ground coffee with an egg and cold water to form a paste this is then added to boiling water, and allowed to boil for a few minutes making sure to stir it. It is allowed to cool then filtered through a cheese cloth or filter paper.
